Weekender - Creede, CO



This past weekend, David and I went on a much needed weekend vacation.  I have been so busy at school during these first few weeks.  I was covering meetings at four schools, trying to see 50 kids at my main school, and on top of that all the paperwork that comes with working at a school.  I’m so thankful things are beginning to slow down…and I’m actually getting to see my kids!

So Friday we went to Creede.  We stayed in this adorable little cabin at the edge of town.  While we were there this weekend, we got to see a great play – “Tamin’ the Shrew.”  The actors were each hilarious in their own ways.  This theater is very well known for it’s wonderful productions and talented actors/actresses.  So if you’re ever in Creede….

Creede is a beautiful little mountain town with no more than 450 people living there year round.  At 9,000 ft., I’m sure the snow is unreal.

Ice Cream!!

This ice cream is so so so yummy!  We absolutely love it :) This recipe is from http://relishscd.blogspot.com/  Lots of great recipes at this site!

Ingredients:
3 large frozen bananas
2 tsp cinnamon
1 Tbsp vanilla extract
1 cup pecans, chopped/1 cup almond butter
1 heaping tablespoon of homemade yogurt
Dash of salt (optional)

Directions:
Take three ripe bananas, peel them, and put them in the freezer.  After they are completely frozen, mix bananas, cinnamon, vanilla, and 1/4 cup of pecans in a blender. Blend on high for about two minutes, until bananas become creamy and ingredients are well mixed. There is not a lot of liquid, so you will have to stir ingredients around to get them to blend together.  Top ice cream with a few pecan pieces.

New Recipes!

Here’s a peak at what’s on our menu this week:

Monday:
Entrée: Baked Pork Chops with apples & onions
Side dish: Cheesy broccoli and cauliflower
Dessert:  Goat Brie topped with warm peaches

We also used chicken in this dish that needed to be cooked
Ingredients:
2 pork chops
2-3 medium apples
1 large onion
Essential Tools: Foil & Glass Dish

We're Back / Slider Saturday

Wow, it’s been almost a year since I wrote to everyone.  So hard to believe…but we’re back! 

We’ve done a lot since last posting in Michigan.  Lived in Cortez, CO for 6 months, went home for 2 months, and now live on top of a mountain in Colorado.  We had such a great time back home with friends and family.  Of course it goes by so fast, but luckily, we absolutely love it out here!  I absolutely love my job and find it to be such a huge blessing to work on the reservation.  Our blog is up and running to take you with us on our adventures, everyday life, and our new adventure......read on
