Wow, it’s been almost
a year since I wrote to everyone.
So hard to believe…but we’re back!
We’ve done a lot since
last posting in Michigan. Lived in
Cortez, CO for 6 months, went home for 2 months, and now live on top of a
mountain in Colorado. We had such a great time back home with friends and family. Of course it goes by so fast, but luckily, we absolutely
love it out here! I absolutely
love my job and find it to be such a huge blessing to work on the reservation. Our blog is up and running to take you with us on our adventures, everyday life, and our new adventure......read on

A little background of things that happened just before we left Cortez and why we are want our blog up and running again...
David
had been having difficulty maintaining his weight and was constantly feeling
exhausted all the time – he was having a severe flare-up because of his Crohn’s Disease. He was scared, I was scared. He knew he had to do something quickly. So he made an appointment with a
natural doctor near Cortez. The
doctor truly inspired him to make a complete change with his diet. We had taken a few steps such as cutting out all sodas and eating foods that were gluten-free. David quickly
discovered through the doc that just going gluten-free was not the answer. Gluten-free breads, crackers, and other GF items are
still all processed, making them just as bad. After his visit, David was so inspired and knew this was what
he needed to do if he wanted to feel better. He began researching even more and stumbled onto a wonderful
read: Breaking
the Vicious Cycle. After that book came another one: WheatBelly. Ever since, we have been following a mix of the SCD/Paleo Diet about 90% of the time. We tossed
anything that was processed, any kind of grain, and all sugar.
Since our change,
we’ve tried to convince our families and friends that this is a way to make you
feel better, lose weight, and possibly change any negative health burdens. So,
these foodie blog posts are for them. We want to share
our menus, recipes, and even those experiments in the kitchen that may not turn
out as planned. There are tons of SCD/Paleo blogs out there that we follow and
recommend that you do the same. We truly believe that eating this way is so beneficial to your health and body. After surgery, tons of expensive medicine, and trips to see medical doctors, this is the only thing that created results. Funny thing, the doctors never once mentioned diet. hmm...
Recipe #1: So here’s what we did
for lunch today! David’s go to
lunch - Sliders with caramelized onions! & butternut squash fries! At this point, he can't have lettuce, so he has them topped with onions, mustard (Annies Organic), and ketchup (link below). I am able to have lettuce so I like to do a lettuce wrap slider.
Recipe for Sliders:
1 pound of ground beef (we used ground ostrich this time)
1 tsp of montreal steak seasoning
1 tsp of smoked salt
Top with sharp cheddar cheese
Caramelized onions:
1/2 onion cut into strips
Butter for saute
Recipe for Fries:
1/2 butternut squash cut into strips
Place strips into a bowl and cover with 2 tsps of olive & salt and pepper to taste
Place in oven on broil for about 10 minutes
Flip fries and finishing cooking until golden brown (Keep an eye on these...Don't burn, you'll be so disappointed)
Seriously, you won't be disappointed eating these healthy "fries."
All the ketchups in the stores are full of cane sugar, even Annie's Organic has sugar in it. We follow a ketchup recipe from ForeverSCD. I promise you that you'll think its from the store...it doesn't disappoint and I am a ketchup lover.
