What's cookin'??


So a couple weeks ago, David decided to try to eat gluten-free due to his Crohn's disease.  He tried before and it was a super difficult task.  But...this time has been a lot easier and he's been able to be free of gluten for a couple weeks now.

Cooking meals has been fun.  Since his decision, we’ve tried several new recipes.  We have been using lots of rice, potatoes, and rice pasta as the main ingredients in our dishes.  There are also several vegetables we have to avoid using as main ingredients too.  I still try to get my serving of veggies...they just go on the side. :)

Here’s one picture I though I’d share:

Even Italian night can be gluten free! This is a rice pasta with pancetta in a wine-cream
sauce.  A recipe from The Pioneer Woman...minus the leeks she used.  I had bruschetta along with
the pasta on Rudi's gluten-free bread.  The bread is crusty and makes a good bread for gluten-free
bruschetta.  Everything turned out delicious!
