What's cookin'??

So a couple weeks ago, David decided to try to eat gluten-free due to his Crohn's disease.  He tried before and it was a super difficult task.  But...this time has been a lot easier and he's been able to be free of gluten for a couple weeks now.

Cooking meals has been fun.  Since his decision, we’ve tried several new recipes.  We have been using lots of rice, potatoes, and rice pasta as the main ingredients in our dishes.  There are also several vegetables we have to avoid using as main ingredients too.  I still try to get my serving of veggies...they just go on the side. :)

Here’s one picture I though I’d share:

Even Italian night can be gluten free! This is a rice pasta with pancetta in a wine-cream
sauce.  A recipe from The Pioneer Woman...minus the leeks she used.  I had bruschetta along with
the pasta on Rudi's gluten-free bread.  The bread is crusty and makes a good bread for gluten-free
bruschetta.  Everything turned out delicious!
Don't ya love our traveling fine china??

Shoot us some gluten free recipes if you’ve tried any!

Happy cooking trails!

5 weeks down...8 to go!

It’s hard to believe we’ve been here longer than a month already.  We’ve been enjoying so much Marquette has to offer.  The lake, the restaurants, the weather, the lighthouses, the boats, the parks…

We enjoy going down to the lake to sit and relax or to have a picnic.  David was crazy enough to jump in the 50ish degree water.  Me- not so much.

Here's some pictures so far...

Lake Superior-

One of my favorite things to see...all of the boats in the harbor!
A relaxing Sunday on the beach.  That's David...just before his freezing plunge.

We caught a view of how rough Lake Superior can be...

Maritime Museum & Lighthouse Tour-

This is the Marquette Harbor lighthouse located in the lower harbor of Marquette.
David and I were able to tour this lighthouse!

On the cat walk during the tour of the lighthouse.  This lighthouse is an old
school house shape.  We walked through several old apartments that are now used
for displays by the Museum.  The coastguard operates this lighthouse, so we weren't
able to tour the control room.

While we waited for the tour to begin, we toured the Museum.
I enjoyed seeing this old scuba gear...check out the boots
and that belt...not to mention the big metal helmet.  I can't
recall how much those boots weighed, but it was too much.

This is a periscope from an old WWII submarine.  They have
it set up so you can look around the harbor of Marquette. :0

The lighthouse/break wall walk
The lighthouse in the lower harbor of Marquette.
The walk along the break wall was a long one...but we got a little
closer to the lighthouse!
A view of all the boats from the break wall.  The water is so clear!
Marquette Farmer’s Market
This is downtown at the Marquette Farmer's Marquette.  They have
tons of fresh vegetables/fruits, farm raised meats, and lots of artsy stuff.
We go pretty much every Saturday to stock up.

Last but not least...our home!

These are the apartments we are living in.  We live on the back side of the
building, facing the woods.  More to come of the apartment..when it's blog appropriate.

A short update...

David and I in Florida this summer
David and I were blessed to have gotten to spend some time at home this summer.  After leaving CO, we spent about six weeks with family and friends.  I worked a little the first couple weeks in Fayetteville.  The 3rd week of June, we went to Florida with the whole Owen clan.  We were also able to spend a weekend in July in Waco. We had a busy, yet fantastic time and were so happy to have the opportunity to go home before hitting the road again.

Overlooking Marquette, MI and Lake Superior
Since then, we have moved to Marquette, MI.  Marquette is in Northern MI, right on lake Superior.  We spent our first week at the Days Inn until we found an apartment.  I am working full time this round in a smaller town outside of Marquette. It’s a 3 month assignment, so we will be here until the middle of October…just before the weather gets really bad. :) We are enjoying the scenery and the cool fall-like temperatures…yes I said fall-like.  Some days it’s 65 degrees.  Which is good…since we have no air!

Our first picture together in MI!  At the top of Mount Marquette.
Sitting at the top of Mount Marquette.  The lake is beautiful!

This is our first hike in MI.  We hiked up Sugarloaf Mountain
The view from the top of Sugarloaf Mountain.  Sugarloaf Mountain
and Mount Marquette are opposite eachother...so you get to see each side of the city.

David on top of Sugarloaf Mountain.  Yes, we do support the Razorbacks on
every mountain top. :)
