Zucchini Bread - Paleo Style

You must try this zucchini bread!  I got the recipe from Running to the Kitchen.  Loving this site!

Here’s what I did for the bread:

1 ½ cups almond flour
1 ½ tsp baking soda
½ tsp salt
1 tsp cinnamon (little more if you like :) )
3 egs
3 tbsp honey
1 tbsp coconut oil, melted
1 ripe mashed banana
1 cup shredded zucchini (squeeze out water)

Steps:
1.       Mix all dry ingredients.
2.        Mix all wet ingredients other than the zucchini.  Blend on medium for a couple minutes until smooth. 
3.       Add zucchini to wet mixture and mix on low until combined. 
4.      Slowly add the dry ingredients to the wet mixture
5.       Grease loaf pan well with coconut oil and then pour into loaf pans.
6.       Cook for about 30 minutes in a 350 degree oven, until a toothpick comes out clean.
7.       Let bread loaf cool on a wire wrack and then enjoy.

I think this would be awesome with a little added chocolate :)
